3 Fall Recipes That Are Easy AND Fun!

Fall is in the air! The nights are getting colder, the air smells sweet and crisp, the leaves are changing colors, and the kids are back in school.

This season brings so much fresh and local vegetables. So here let me introduce you to some fun and easy fall recipes you can make yourself or with help from your junior chefs. 

3 Fall Recipes

1. Chocolate Cake (with Beets)

A favorite of mine involves chocolate cake. Because who doesn’t love chocolate? 

And there’s a tiny secret ingredient — red beets! If you’ve been gifted (or grown your own) beets this season but are unsure what to do with them, this is a perfect recipe to try!

To make it easy this recipe uses a chocolate cake mix and they suggest that you use canned beets. However, if you have the option, I recommend using fresh beets.

Either roast or boil them in advance and then mash. The cake comes out rich and moist, and you would never guess beets were the hidden ingredient.

2. Zucchini Pizza Boats

And now to throw something savory into the mix. I recommend trying this fall recipe for Zucchini Pizza Boats! They’re yummy, cheesy, and fun. Plus, your kids will get so many great nutrients from the zucchini!

Note that this is a base recipe, and you can always switch out the pepperoni for cooked sausage, or keep the dish vegetarian. 

Add a salad kit for the side and some bread, and you have a delicious and healthy dinner!

3. Fall Baked Apples

Baked Apples

A simple and tasty way to enjoy apples fresh from the tree!

Ingredients
  

  • 4 medium apples
  • 4 tbsp sugar
  • 1 tbsp cinnamon
  • 1 dab butter

Instructions
 

  • Wash and core the apples. Using either a coring tool or a knife to take out the center of the apple.
  • Mix the cinnamon and sugar together.
  • Then, start filling the apples with the cinnamon sugar mixture. And put a little butter on top of the apple to keep the mixture in.
  • Put them in a pan with a little water.
  • Bake for approximately 30 minutes at 350 degrees F until apples are cooked and eat while still warm.

Cooking with fresh produce doesn’t have to be stressful. I love finding new and different ways to use those treasures from the garden or fun finds from the farmer’s market. Enjoy the flavors of the season in these three easy fall recipes!
